It is big and bold and has subsumed all the oak over its 24 months affinamento into its spicy, plummy & dense bouquet. Named after the Latin word for thistle to reflect Paula’s part-Scottish heritage this is a SuperTuscan .
Product Info
The Carduus is 100% Merlot (prior to Paula owning the estate this fruit made its way into the Chianti). Only three barrels are made using French oak (225l & 350l, 1st-3rd passage) for the aging. One of the barrels is the excpetionally rare Taransaud T5. (T5 refers to the fact that the staves are dried for 5 years as opposed to normal 2-3 – gives great finesse and length to the wine).
