Tasting Notes
On the nose, dates, apples and roasted banana sit alongside maple syrup and spicy cinnamon. A subtle earthy peat lurks in the background.
The palate features a similar fruity character complimented by caramelised almonds and a subdued maritime peat. Well balanced and complex with a smooth velvety texture.

Bottle at 60.9% and matured in bourbon, STR wine barriques and rum casks which previously held peated whisky, the Friar Jon Cor Chapter 2 features complex flavours of sweet roasted banana, cinnamon and a subtle maritime peat.
A Tironensian monk based at Lindores Abbey (that’s Lindores Abbey the Abbey, not Lindores Abbey the distillery), Jon Cor was mentioned in the Exchequer Roll of 1494 – the first ever written reference of Scotch Whisky. By order of the King he was to receive VIII bolls, around 500kg, of malted barley to produce aqua vitae. Latin for the water of life, this is a direct translation of the Scots Gaelic word Usquabae meaning whisky. The unusual bottle shape is reminiscent of the stone pillars carefully carved when the Abbey was built back in the 12th century, while it’s black colour symbolises the cloth tunics worn by it’s inhabitants.
