Kilchoman Cognac Cask - 2023 Edition

Limited to 15 100 bottles, Kilchoman’s peaty, maritime character is enhanced with cognac maturation giving notes of cinnamon, nutmeg and apricot.

Cognac is a variety of brandy made by distilling white wine produced in the Cognac region of France. The spirit must undergo a minimum of two years aging in French oak, after which many casks make their way to Scotland for use within our whisky industry. To produce this Kilochoman expression, 32 of these casks purchased from Tonellerie Bossuet were used to mature peated spirit for a minimum of six years. Complex, rich and fruity, Kilchoman founder Anthony Wills comments: “The limited-edition cask exploration editions allow us to experiment with our spirit here at Kilchoman. The Cognac casks selected for this 2023 release permit our fruit-driven, citrus spirit style to balance with that of the Cognac oak. There is a delicate balance to be found when working with Cognac casks; keeping the age of this release at a minimum of six years old ensures the flavours from the spirit and the cask are easily detected, neither dominates”
